No Bake Peanut Butter Energy Balls

Ingredients

  • 1 cup quick rolled oats

  • ¾ cup granola (your favorite variety)

  • ½ tsp cinnamon

  • ½ cup flax meal (or freshly ground flaxseeds)

  • ½ cup mini chocolate chips

  • 2 Tbsp honey

  • 1 cup creamy peanut butter

 

Instructions

  1. In a mini food processor, pulse oats and granola until roughly minced. Transfer to a medium bowl.

  2. Add cinnamon, flax meal, and mini chocolate chips to the bowl. Stir until well combined.

  3. Stir in honey and peanut butter until a firm dough forms. (If mixture seems too dry, add a little more honey or peanut butter)

  4. Use a cookie scoop or tablespoon to portion dough, then roll into balls between your palms.

  5. Store in an airtight container in the refrigerator.
